Feasting With FARE: Pupusas and Salsa Roja

Take a trip to El Salvador with Chef Leslie Durso in your very own kitchen! These delicious Pupusas are a family favorite and top-9 free!

Ingredients

Pupusas

  • 2 cups masa 
  • 1 ¾ cups water
  • 1 tsp. salt

Filling

  • Vegan cheddar cheese
  • Caramelized onion
  • Refried beans 

Salsa Roja

  • 3 garlic cloves
  • ½ medium yellow onion
  • 1 jalapeno
  • 1 tbsp. olive or avocado oil 
  • 1 14.5oz can of tomatoes 
  • ½ cup vegetable broth
  • 1 tsp. dried oregano 
  • 1 tsp. cumin 
  • 1 tsp. chili powder 
  • ¼ tsp. salt 

Instructions

Salsa Roja

  1. Place all of the ingredients in a blender and blend until smooth. 
  2. Place salsa in a small pot and bring to a boil. Reduce to a simmer and let reduce down, uncovered for 15 minutes stirring frequently.
  3. Set aside.

Pupusas 

  1. In a large bowl, whisk together the masa harina and salt, then add the water. Use your hands to mix until the dough comes together. Divide the dough into 8 pieces and roll into balls. 
    1. To form, flatten a ball into a round circle using your hands. Place a dollop of filling in the center and fold the sides in to close. Roll into a ball again and flatten in between your hands. 
  2. Heat a skillet to medium heat and spray with cooking oil. 
  3. Place 2-3 pupusas on the pan and cook for 2-4 minutes, or until the bottoms are golden brown. Flip and cook on the other side for 2-4 minutes more, until golden brown and warmed through. Repeat with the remaining pupusas.
  4. Serve with the salsa roja.
