FARE Partners with Parche Oakland at Taste of the NFL to Showcase Food Allergy-Friendly Culinary Excellence for More Diners

Contemporary Colombian Restaurant’s Food Allergy-Friendly Menu Demonstrates How Professional Kitchens Can Expand Access While Maintaining Quality; Cincinnati Bengals Defensive Tackle McKinnley Jackson to Join FARE as Community Ambassador

McLEAN, Va.—Feb 3, 2026FARE (Food Allergy Research & Education) today announced it will partner with Parche Oakland at Taste of the NFL on Saturday, Feb. 7, at the Hibernia in San Francisco. FARE will partner with Parche Oakland to demonstrate that restaurants can deliver their exceptional dining experiences while reaching the more than 33 million people in the United States managing food allergy.

At the FARE booth, guests will enjoy Parche Oakland’s Posta Negra Bites—cola-braised short rib with yuca-coconut mash and pickled Sweety Drops—a modern interpretation of a classic Colombian dish that is naturally gluten- and dairy-free. To further expand access, the dish will also be available with lion’s mane mushroom in place of short rib, accommodating guests managing alpha-gal syndrome as well as those seeking plant-based options.

“We’re pleased to partner with Parche Oakland, whose authentic menu and thoughtful ingredient selection demonstrates how restaurants can expand access for people managing food allergy without compromising quality or creativity,” said Sung Poblete, PhD, RN, CEO of FARE. “When restaurants prioritize allergen transparency and careful ingredient curation, they create a better experience for all of their guests.”

For Parche Oakland, expanding access begins in the kitchen, where both ingredients and preparation protect quality and guest trust, while paying homage to the culture, traditions, biodiversity, native ingredients, and terroir of Colombia.

"We’re honored to partner with FARE to show that thoughtful, inclusive cooking can still be deeply rooted in culture and flavor,” said Paul Iglesias, Chef and co-owner of Parche Oakland. “Food allergies can make dining out feel impossible at times, and we feel strongly that no one should be excluded from the experience. At Parche, our goal is to create a restaurant where everyone can feel welcome, confident, and truly enjoy their meal.”

FARE’s presence at Taste of the NFL for the second consecutive year underscores that food allergy affects everyone, including athletes, their families, and the millions of fans who attend or watch sporting events where food is central to the experience. As food remains a powerful connector at major cultural and sporting moments, FARE continues to champion dining practices that allow more people to participate fully and safely.

Cincinnati Bengals defensive tackle McKinnley Jackson will join FARE at Taste of the NFL, lending his support as a committed community ambassador.

Taste of the NFL is hosted by GENYOUth, the national nonprofit founded by America’s dairy farmers and the NFL, to raise awareness and generate funds to fight student hunger.
