An Inside Look at FARE’s Pediatric Food Allergy Course: Interviews with Four Recent Graduates

This comprehensive course on nutrition and care for IgE- and non-IgE-mediated food allergy ensures healthcare professionals are prepared to provide up-to-date and evidence-based care.

FARE’s Pediatric Food Allergy Course offers a comprehensive, exclusive learning experience on nutrition and care for IgE- and non-IgE-mediated food allergy. This training ensures healthcare professionals are prepared to provide up-to-date and evidence-based care, and awards continuing education credits for registered dietitians, registered nurses and physicians. 

Since 2020, almost 300 students from 20 countries have enrolled, and this year has seen a record-setting number of enrollees in the course. Tiffany Leon, MS, RD, Assistant Director of Training and Professional Programs at FARE, reached out to four recent graduates of the program to discover more about their experience:

Could you describe your personal connection to food allergies?

I have a personal and professional connection to food allergies. Personally, I have several food allergies and oral allergy syndrome, and I am also the parent of two children with multiple food allergies. My daughter is allergic to dairy, eggs, several tree nuts, and sesame, and my son is allergic to cashews, sesame, and sunflower seeds

My daughter is currently on Xolair, which has given me firsthand insight into how rapidly food allergy management is evolving and how life-changing these therapies can be for families.

What motivated you to enroll in the Pediatric Food Allergy Course?

I became a Registered Dietitian with the intention of specializing in food allergies. My lived experience, both personally and as a parent of children with allergies, made it clear to me that families need more specialized, practical nutrition support in this area.

While foundational training is strong, there is limited in-depth food allergy education within didactic programs. I learned about FARE’s Pediatric Food Allergy Course when it first launched but intentionally waited until I was a credentialed provider so I could fully apply the material in clinical and real-world settings. Now, as I manage my group private practice, Allergy Nutritionist, I can confidently say this course was one of the best professional decisions I have made.

What motivated you to enroll in the Pediatric Food Allergy Course?

I completed the Pediatric Food Allergy Course in 2021 while working at Rahima Moosa Mother and Child Hospital, where I helped establish a pediatric government allergy clinic. Dr. Marinda McDonald, who volunteered her expertise at the clinic, encouraged a colleague and me to apply for the scholarship. We were extremely fortunate to receive it, and I saw it as an invaluable opportunity to strengthen my knowledge and improve patient care.

Have you implemented any changes in your practice since completing the course?

The allergy clinic implemented structured allergy protocols, including up-dosing, food challenge dosages, prevention strategies, and management plans. We also developed patient information handouts and clinical protocols to improve education, safety, and consistency of care.

Please share about your experience in the course.

In an era of technology first everything, I really appreciated that this course kept human connection present in our learnings. I also appreciated that it focused on mixed modes of learning, which can appeal to any type of learner. The course included pre-recorded webinars, live lectures, group projects, individual assignments, individualized feedback, and more. It takes a considerable amount of effort, thought, and planning to build this type of course and I’m so grateful I had the privilege of experiencing the course. I secretly (or not so secretly) would love to take it again!

Are there any FARE resources you find particularly valuable in your practice? 

Without a doubt, the FARE & Academy of Nutrition and Dietetics Health Professional’s Guide to the Nutritional Management of Food Allergies textbook is a fantastic resource. It tells you everything you need to know about the basics of the most common food allergies and food intolerances. It’s a must have for any dietitian, but especially pediatric dietitians. I keep my textbook on my desk and I’m a big fan of taking screenshots of key resources and tables to quickly reference later.

What motivated you to enroll in the Pediatric Food Allergy Course?

It's a long story. Back in 2012, I heard about OIT for the first time and started practicing milk steps and egg ladder or something similar. And at first, frankly speaking, these were my experiments with meatballs, cookies and cupcakes. I read and listened to the speeches of Carina Venter, Liam O'Mahony, Rosan Meyer, Isabel Skypala, Nikolaos Papadopoulos, read articles, and went to meetings with experts that took place at congresses. Then in 2024 I saw the book Health Professional's Guide to Nutrition Management of Food Allergies by Carina Venter, and it was so incredibly accessible and understandable. I realized that I don't know so much, and am doing it wrong and at random—and that I can get the best knowledge and experience how to do it right. I always had and still have a desire to know more, to be better, and a feeling that I have little or not-enough knowledge. But food allergy has always been the love of my life, and I could get the best knowledge in the world from the best experts on this topic. So I wrote a letter to FARE. 

Have you implemented any changes in your practice since completing the course?

Thanks to Dr. Carina Venter's training and help, the OFC procedure is now registered in Ukraine and there is a full-fledged Food Allergy Center. We have not yet conducted many tests, some with nuts, milk and egg, but I am sure that this is only the beginning. Thanks to studying at FARE, I can fully help children with allergies and this makes me happy.
