Managing Food Allergies in the Early Care Setting

Managing food allergies in the preschool setting can be challenging. Providing a safe and nurturing environment is critical to a child’s growth and development. This presentation will address the important roles of both the parents and the providers in creating a successful learning environment for children with food allergies. We will discuss current research, best practices, recommendations from the CDC guidelines and practical management tips. We will also discuss the rights of children with food allergies and applicable laws.
Gina Mennett Lee, M.Ed. is a nationally recognized food allergy educator, advocate, and consultant who specializes in the management of food allergies in the school setting. She holds a master’s degree in educational leadership and bachelor’s degrees in both elementary and special education. She is the founder of the Food Allergy Education Network, and the director of the National Allergy & Anaphylaxis Council. In addition, she is the owner of a private food allergy consulting firm, Mennett Lee, LLC and serves as an expert contributor to AllergyHome. She recently served as an expert witness in the landmark Iowa food allergy case, Knudsen vs. Tiger Tots Community Child Care Center Corporation and has appeared in or contributed to numerous television, online and print media sources regarding the topic of food allergy management. Gina is co-author of the soon-to-be released Food Allergy Management in Early Care Settings.
Laurel Francoeur graduated from M.I.T. with a bachelor’s degree in political science with a minor in philosophy. She is a graduate of Suffolk Law School and has been a practicing lawyer since 1996. She is a support group leader for the Asthma and Allergy Foundation of America (AAFA) and served on their board of directors. She is currently a patient advocate for AAFA and education project manager of Kids With Food Allergies Foundation. She also is co-owner of Greenlaurel Documents, an online allergy resource company specializing in customized food allergy plans. Laurel is co-author of the soon-to-be released, Food Allergy Management in Early Care Settings.
