Ingredients

1/2 cup shortening
1 cup sugar
2 1/4 cups flour
3/4 cup unsweetened cocoa powder
2 1/2 tsp. baking powder
1/2 tsp. salt
1 cup water
1 tsp. vanilla extract

Directions

Preheat oven to 375º. Grease 13x9-inch pan. Cream shortening and sugar until light and fluffy, about 4 minutes. Mix in dry ingredients. Add water and vanilla extract. Beat well. Bake 40 to 45 minutes. Cool completely. Spread or drizzle Raspberry Icing on top.

Raspberry Icing
4 T. milk-free margarine, softened
2 T. shortening
2 cups confectioners sugar
1 T. water
1 tsp. vanilla extract
1 tsp. raspberry extract
4 to 6 drops red food coloring

With an electric mixer on medium speed, cream the margarine and shortening until blended. Beat in confectioners sugar, water, and vanilla and raspberry extracts until smooth. Beat in food coloring.

    tasted great, but a little dry. Could use something to moisten it.
