Ingredients

2 cups soy beverage
1 cup mushrooms, canned or fresh
2 cups uncooked elbow macaroni
2 cups cooked turkey, diced
1 cup peas
1/4 cup onion, chopped
salt and pepper to taste
1/2 cup breadcrumbs
2 T. milk-free margarine, softened

Directions

Preheat oven to 350°. Grease 2-quart casserole dish; set aside. In blender, combine soy beverage and mushrooms. Puree and set aside. Add macaroni,
turkey, peas, onion, and salt and pepper to prepared casserole dish. Stir in soy
beverage mixture, mixing well. Cover and bake 50 minutes; remove casserole from
oven. In small bowl, combine breadcrumbs and margarine, and sprinkle mixture over top of casserole. Return casserole to oven uncovered and cook 10 minutes more.

Note: To make this dish wheat-free, substitute 1 cup uncooked rice for elbow macaroni, and omit the breadcrumb topping.

    on this receipt, where are you finding breadcrums with no milk or eggs in it? I can't find any??

    I found breadcrumbs by emeril - original panko bread crumbs. They are a little bit bigger than regular ones but taste great.

    What about the elbow macaroni? Do you recommend a brand of noodles that are egg free?
