Strawberry Cornmeal Mini-Muffins

Ingredients
1 cup rice flour
1 cup cornmeal
1/4 cup sugar, plus extra for sprinkling
3 tsp. baking powder
1 tsp. salt
1/4 cup shortening
1 cup water
1 1/2 T. water, 1 1/2 T. oil, 1 tsp. baking powder, mixed together
1 cup strawberries, finely chopped
Directions
Preheat oven to 425°. Coat mini-muffin tin with cooking spray. Set aside. In large bowl, mix rice flour, cornmeal, 1/4 cup sugar, baking powder, and salt. Cut in shortening. Stir in 1 cup water and then the water, oil, and baking powder mixture.
Fold in strawberries. Spoon batter into prepared tin. Sprinkle tops generously with sugar. Bake 15 minutes, or until toothpick inserted in center comes out clean.
Note: If wheat flour is allowed, it can be substituted for the rice flour.


Comments
Connie, you may wish to try oat flour in place of rice flour in this recipe. If you are not avoiding eggs, use one egg instead of the water, oil, baking powder mixture.
made them this am, heavy, but nice flavor. I think I'll put a few more strawberries in next time.
