Stained Glass Cookies

Ingredients
1 cup milk-free margarine, softened
1 1/2 cups confectioners sugar
1 1/2 T. water, 1 1/2 T. oil, 1 tsp. baking powder; mixed together
1 1/2 tsp. vanilla extract
2 1/2 cups flour
1 tsp. baking soda
1 tsp. cream of tartar
3 colors of food coloring
Directions
In a medium bowl with an electronic mixer, beat margarine; confectioners sugar; water,oil, and baking powder mixture; and vanilla extract. Add flour, baking soda, and cream of tartar. Divide dough in half. Divide one half into three sections. Add a different food coloring to each of the three sections, leaving the larger portion uncolored. Cover and chill dough 2 hours.
Preheat over to 375°. Grease cookie sheets. Roll plain half of dough 1/8-inch thick on lightly floured board. Cut into any desired shapes. Place on cookie sheets. Roll colored dough; cut out different shapes of "stained glass" to fit on top of each plain cookie shape. Bake 7 minutes or until golden brown on edges. Makes about 2 dozen cookies.
