Spring Blossom Cookies

Ingredients
4 cups flour
1 1/2 cups sugar
2 tsp. baking powder
3/4 cup milk-free margarine, softened
3 T. oil, 3 T. water; 2 tsp. baking powder, mixed together
2 tsp. vanilla extract
1/4 cup water
coarse colored sugar
Directions
In large bowl, combine flour, sugar, and
baking powder. In small bowl, beat
margarine until creamy. Beat into flour
mixture, about 2 minutes. Mixture will be
powdery. Beat in water, oil, and baking
powder mixture until mixture resembles
coarse crumbs. Beat in vanilla extract and
water until soft dough forms. (If needed,
add more water, 1 T. at a time, to bring
dough together.) Gather dough, knead, and
flatten into a disc. Wrap in plastic and
chill overnight.
Preheat oven to 350°. Lightly flour surface.
Using a floured rolling pin, roll out to
1/4-inch thickness. Cut out with flowershaped
cookie cutters. Sprinkle generously
with colored sugar. Transfer to ungreased
cookie sheet. Bake 8 to 10 minutes, or until
golden in color. Cool completely.
