Slow Cooker Beef Stew

Ingredients

2 lb. beef stew meat
2 T. cornstarch
1/2 tsp. salt
1/2 tsp. black pepper
1 1/2 cup beef broth
1 bay leaf
1 tsp. paprika
1/2 tsp. minced garlic
3 large potatoes, peeled and cut into
1-inch cubes
1 1/2 cups baby carrots
1 medium onion, peeled and diced
1 stalk celery, chopped

Directions

Add meat to slow cooker. In small bowl, combine cornstarch, salt, and pepper. Pour over meat, stirring to coat. Stir in remaining ingredients. Mix well. Cover and cook on low 8 to 10 hours, or on high 4 to 6 hours.

NOTE: If you use ready made beef broth, be sure to read the label carefully; some brands have wheat or soy ingredients. Also, if you can't find beef stew meat prepackaged, you can cut chuck steak into 1-inch cubes or ask a butcher to prepare it for you.
