Shamrock Finger Sandwiches

Ingredients
1/4 cup Dijon mustard
1/4 cup honey
sandwich bread
thinly sliced deli meat (turkey, ham or chicken)*
lettuce
Directions
In small bowl, stir together mustard and honey until well blended. Spread desired
amount of mixture onto 1 slice of bread. Top with deli meat and lettuce, and then with another slice of bread. Cut out shapes using a metal shamrock cookie cutter. (Depending on the amount of meat you add to your sandwich, you may need to wiggle the cookie cutter to get a clean cut. Otherwise, cut the bread first, and then assemble the sandwiches.) Once shapes are cut out, fold lettuce and place inside each sandwich.
*Because of the potential for cross-contact with cheese, those with milk allergy should purchase prepackaged deli meats and check their ingredients carefully.
