Ingredients

1 cup sugar
1/2 cup oil
3 cups flour
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 tsp. baking soda
1/2 cup apple juice
1/2 cup molasses
1 cup raisins

Directions

Preheat oven to 375°. Grease cookie sheets; set aside. In large bowl, cream together sugar and oil. Set aside. In another large bowl, combine flour, cinnamon, nutmeg, and baking soda. Add dry ingredients slowly to sugar mixture, stirring well. Add apple juice and molasses, and mix until blended. Stir in raisins. Drop by rounded teaspoons about 2 inches apart onto prepared cookie sheets. Bake approximately 10 minutes, or until centers begin to have the same crackly appearance as the rest of the cookie surface. Cool on cookie sheet 2 minutes, then transfer to wire racks to cool completely.

    I love the texture -delightfully moist -but the flavor is bland and over sweet. I might try some substitutions if I make it again -brown sugar instead of white? corn syrup instead of molasses? maybe a dash of chili powder?
