Quick-and-Easy Pear Cobbler

Ingredients
3 T. milk-free margarine, melted and divided
2 (28-oz.) cans pear halves, drained
1 cup flour
1 cup sugar, divided
1 tsp. baking powder
1/2 tsp. salt
1/2 cup water
1 tsp. vanilla extract
2 T. light brown sugar, firmly packed
1 tsp. lemon zest
Directions
Preheat oven to 400°. Drizzle bottom of 13x9-inch pan with 1 1/2 T. margarine. Arrange pear halves in 3 rows, cut sides down, over margarine. Set aside. In medium bowl, combine flour, 1/2 cup sugar, baking powder, and salt. Add remaining margarine, water, and vanilla extract. Spoon batter around pear halves. In small bowl, combine remaining sugar, brown sugar, and lemon zest; sprinkle over pear halves. Bake 30 minutes, or until bubbly.

I made this for a family get-together so that my daughter and nephew (both with food allergies) could enjoy a warm dessert. It came out great and the kids loved it. I also tried it with peaches, and found that you can use a little less water to prevent mushiness.
