Pumpkin Cut-Out Cookies

Ingredients

Cookies

2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1/4 cup milk-free margarine, softened
1/4 cup shortening
3/4 cup sugar
6 T. canned pumpkin
1 tsp. vanilla extract

Frosting

2 cups confectioners sugar
1/3 cup milk-free margarine, softened
1 T. water
1/2 tsp. vanilla extract
orange food coloring

Directions

In small bowl, combine flour, baking powder, and salt. Set aside. In medium bowl, combine margarine, shortening, and sugar. Blend at medium speed until fluffy. Add pumpkin. Stir well. Add vanilla extract and combine with flour mixture. Stir well. Cover and chill 8 hours.

Preheat oven to 350°. Lightly grease cookie sheets and set aside. Roll dough 1/4-inch thick on lightly floured surface. Cut out dough using cookie cutters of choice, and place cookies on prepared cookie sheets. Bake 8 minutes or until edges begin to brown. Cool on wire racks.

To make frosting, in small bowl combine confectioners sugar and margarine. Blend with electric mixer at low speed. Add water, vanilla extract, and food coloring (to desired color). Frost cooled cookies, and decorate as desired.

    These turned out great! I've made them 3 times. I'm going to use this same recipe for Christmas cookies. You wouldn't know there's pumpkin in them. They're good! Thank you.
