Ingredients

2 1/2 cups flour
1 cup sugar
3 tsp. baking powder, divided
1 1/4 tsp. pumpkin pie spice
dash of salt
3 T. water
3 T. oil
1/2 cup canned pumpkin
1 tsp. vanilla extract

Directions

Preheat oven to 350°. Grease a baking sheet. Set aside. In large bowl, combine
flour, sugar, 1 tsp. baking powder, pumpkin pie spice, and salt. Set aside. In medium bowl, combine water, oil, remaining baking powder, pumpkin, and vanilla extract. Pour into flour mixture, stirring once or twice to just mix the ingredients and make the dough crumbly.

Dust hands with flour. On floured surface, lightly knead dough until barely blended
and smooth. Place dough onto prepared pan and shape into a log about 15 inches
long. Bake 30 minutes, or until the center is firm to the touch. Let cool 15 minutes. Using a serrated knife, diagonally cut loaf into 1-inch slices; leave slices standing upright but slightly separated. Reduce oven temperature to 300° and bake 20 minutes. Cool completely.
