Party Slice and Bake Sugar Cookies

Ingredients

1 1/4 cup flour
1/4 tsp. salt
12 T. (1 and 1/2 sticks) milk-free margarine, softened
3/4 cup light brown sugar, firmly packed
1 1/2 tsp. vanilla extract

Directions

In medium bowl, mix together flour and salt. Set aside. In large bowl using an electric mixer at medium speed, beat margarine and brown sugar until light and fluffy. Add vanilla extract. Beat in flour mixture. Divide dough in half and roll into two 8-inch logs. Wrap logs separate in wax paper. Refrigerate 2 hours or until firm.

Preheat oven to 350°. Slice chilled dough into 1/4-inch thick slices; place on cookie sheets. Bake 9 to 11 minutes, rotating the cookie sheets around halfway through their baking time. When golden brown around the edges, remove from oven and let cool slightly on cookie sheets. Transfer to a wire rack to cool completely.
