Ingredients

6 medium potatoes
2/3 cup finely chopped onion
6 T. finely chopped fresh parsley
1/4 cup milk-free margarine, melted
salt
pepper

*This recipe is coded as containing soy, however, some milk- and soy-free margarines are available.

Directions

Peel potatoes. Boil potatoes in salted water. Drain. Dice the potatoes and set aside. In a large frying pan, gently fry the onion and parsley in margarine. Add potatoes, stirring to coat evenly. Season with salt and pepper to taste. Place potato stuffing in poultry and roast.
