Ingredients

2 pie crusts*, unbaked
7 or 8 Granny Smith apples, peeled and thinly sliced
2/3 cups sugar
2 T. quick-cooking tapioca
1 T. ground cinnamon
1/2 tsp. ground nutmeg

Directions

Preheat oven to 400°. Press one pie crust into 9-inch pan. Set aside. In large bowl, combine apples, sugar, tapioca, cinnamon, and nutmeg. Gently toss until all ingredients are evenly distributed. Spoon filling into crust. On lightly floured surface, roll out remaining pastry. Transfer to top of pie. Trim edges, leaving a 1-inch overhang. Press around rim of pan to seal crusts together. Cut vents in center of top crust. Bake 1 hour, or until golden brown.
