Ingredients

1 cup milk-free margarine, softened
1 cup sugar
1 cup brown sugar, firmly packed
3 T. water, 3 T. oil, and 2 tsp. baking powder, mixed together
1 tsp. vanilla extract
2 1/2 cups quick oats
2 cups flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 cup raisins

Directions

Preheat oven to 375°. In large bowl, cream margarine and both sugars. Add water, oil, and baking powder mixture and vanilla extract. Set aside. Measure oats and blend in a blender to a fine powder. Pour blended oats into margarine mixture. Stir in flour, salt, baking powder, and baking soda. Add raisins; mix well. Roll dough into 1-inch balls and place two inches apart on a cookie sheet. Bake 10 minutes. Allow to cool on wire rack.

    Tried these today. Delicious, easy, and made lots of cookies. My family loved them! Great recipe.

    we tried these cookies and we LOVE them!!!! I used old fashioned rolled oats(you just don't use quite as much), and it gives the cookies a thicker texture.... they are also good with craisins instead of raisins!!!
