Oatmeal Chocolate Chip Cookies

Ingredients

1 cup milk-free margarine, softened
1 cup light brown sugar, firmly packed
½ cup sugar
½ cup applesauce plus 2 tsp baking powder, mixed together
1 tsp. vanilla extract
1 ½ cups flour
1 tsp. baking soda
1 tsp. ground cinnamon
½ tsp salt
3 cups quick oats
1 ½ cups raisins or chocolate chips

Directions

Preheat oven to 350°. In large bowl, mix margarine and sugars until creamy. Add applesauce mixture and vanilla extract; beat well. Set aside. In medium bowl, combine flour, baking soda, cinnamon, and salt. Mix into margarine mixture. Stir in oats and raisins or chocolate chips. Mix well. Drop by tablespoonfuls onto cookie sheet. Bake 10-12 minutes or until golden. Transfer to a wire rack.

Note: These freeze well.

    These cookies turned out great! I used raisins and no chocolate chips because I'm still looking for milk-free chips.
