Ingredients

3/4 cup sugar
1/2 cup milk-free margarine, softened
1/2 cup shortening
1 1/2 T. water, 1 1/2 T. oil, 1 tsp. baking powder, mixed together
2 1/4 cups flour
1/2 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla extract

Directions

Preheat oven to 350°. In large bowl, with an electric mixer, cream together sugar, margarine, and shortening. Add water, oil, and baking powder mixture; mix well. Set aside. In large bowl, combine flour, baking powder, and salt. Add to margarine mixture; stir until blended. Add vanilla extract and stir well. Roll dough into 1-inch balls and flatten slightly with palms of hands. Place on ungreased cookie sheets and bake 7 minutes, or until set. Remove from oven and allow to cool completely. Top with Mocha Drizzle.

Mocha Drizzle

1 cup confectioners sugar
2 T. unsweetened cocoa powder
2 T. cold, strong coffee
1 T. shortening
1 T. water

In a small bowl, with an electric mixer, beat together all ingredients. To thin the mixture, add equal parts water and coffee, 1 tsp. at a time. To thicken the mixture, add more confectioners sugar. Spoon icing into plastic bag. Snip off a small section from one corner at the bottom of the bag. Squeeze icing onto cookies in a zigzag pattern.
