Ingredients

Cupcakes

3 1/2 cups flour
1 1/2 cups sugar
3 tsp. baking powder
1/4 tsp. salt
1/2 cup milk-free margarine, softened
2 cups apple juice
1 tsp. vanilla extract
1 tsp. maple syrup

Directions

Preheat oven to 350°. Line muffin tins
with paper liners. Set aside. In medium
bowl, combine dry ingredients; set aside.
In large bowl, with an electric mixer on
medium speed, cream margarine. Beat in
flour mixture and apple juice alternately.
Beat in vanilla extract and maple syrup.
Pour into prepared muffin cups 2/3 full
and bake 20 minutes, or until toothpick
inserted in center comes out clean. Cool
completely. Frost.

Frosting

2 T. shortening
2 T. maple syrup
2 cups confectioners sugar

In small bowl, with an electric mixer
on medium speed, beat shortening and
maple syrup until well blended. Beat
in confectioners sugars until smooth. If
mixture is too thick, water may be added
1 tsp. at a time until desired consistency is
achieved.

    Made this dessert but instead of cupcakes, I made a 9x13 cake. Bake at 350 for 35 minutes. The cake itself had a wonderful texture but I could not taste the maple. I am going to try maple extract next time rather than maple syrup so the maple flavor comes through! Same with the icing - it was delicious but I couldn't taste the maple. So, I will try maple extract rather than the syrup next time!
