Lunch Wrap With Hummus Spread

Ingredients

1 (15-oz.) can garbanzo beans, drained
1/4 cup olive oil
1 T. lemon juice
1 tsp. cumin
1/8 tsp. ground red pepper
4 flour tortillas
1/2 lb. thinly sliced cold cuts, such as chicken or turkey*
4 curly-leaf lettuce leaves

Directions

In an electric mixer, puree garbanzo beans, oil, lemon juice, and spices until smooth. Spread 2 to 3 T. of mixture onto a tortilla. Top with cold cuts and lettuce. Roll up tightly, and slice through the center diagonally. Use remaining hummus as
a dip.

Note: To make this recipe wheat-free, use corn tortillas instead of flour tortillas. Be sure to check the label.

* Keep in mind that cross-contact is a risk with cold cuts from the deli counter. Always check ingredient labels on packaged cold cuts. You may want to use sliced leftover meats in this recipe.

    Tried the hummus - nice. Added garlic powder - even better. Might be good with red pepper - fresh or in a jar.
