Lunch Kabobs

Ingredients
12 wooden skewers
1 cup baby carrots, cut into thirds
20 broccoli florets
1/2 yellow pepper, cut into 1-inch cubes
20 cherry tomatoes
1 (8-oz.) can pineapple chunks
1/2 lb. cooked ham,* cut into 1-inch cubes
Directions
In large, shallow dish, soak skewers in water 30 minutes. Remove from water and allow to dry. Place all vegetables in a steamer, and steam 5 minutes or until tender. Do not overcook. Thread ingredients onto skewers. Continue until all kabobs have been assembled. Drizzle with Apple-Ginger Dressing.
Apple-Ginger Dressing
1 cup apple juice concentrate
1 cup water
1 1/2 T. olive oil
1/2 tsp. Italian seasoning
1/2 tsp. ground ginger
In large plastic container with a lid or cap, combine all ingredients. Cover container and shake vigorously until well blended. Drizzle over Lunch Kabobs.
*Be sure to read the label.
Suggestions: Use any combination of your favorite fruits, vegetables, and meats to assemble kabobs.
Cooked turkey breast may be used instead of ham.
