Lemon Spritz Bars with Chocolate-Raspberry Glaze

Ingredients
1 cup milk-free margarine, softened
1 cup confectioners sugar
1/4 cup lemon juice
2 1/2 cups flour
1/4 tsp. salt
sprinkles (optional)
Chocolate-Raspberry Glaze
1 1/3 cups confectioners sugar
2 T. unsweetened cocoa powder
2 T. water
1/2 tsp. raspberry extract
Directions
Preheat oven to 375º. Grease cookie
sheets. Set aside. In large bowl, beat
margarine and confectioners sugar
until fluffy. Add lemon juice; beat
well. Stir in flour and salt; mix well.
Place dough in cookie press fitted
with star-shaped disc. Press dough
into 3-inch strips onto cookie sheets.
Bake 5 to 6 minutes or until lightly
browned on bottom. Cool 1 to 2
minutes; remove from cookie sheets
and allow to cool completely. Prepare
Chocolate-Raspberry Glaze. Dip
ends of cookies into glaze, then add
sprinkles, if desired.
Chocolate-Raspberry Glaze
In medium bowl, sift together
confectioners sugar and cocoa powder.
Add water and raspberry extract; stir
well. Add more water, 1 teaspoon at
a time, until desired consistency is
achieved.
