Ingredients

1 lb. milk-free, egg-free lasagna noodles
3 lbs. firm tofu
1/4 cup lemon juice
4 tsp. honey
6 T. oil
4 tsp. basil
1 tsp. garlic powder
1/2 tsp. nutmeg
2 tsp. salt
3 cups spaghetti sauce*

Directions

Cook lasagna noodles according to package directions; drain and set aside. Preheat oven to 350°. Lightly grease 13x9-inch pan. Process tofu in food processor until smooth. Pour into a mixing bowl and add lemon juice, honey, oil, basil, garlic powder, nutmeg, and salt. Stir until well mixed; set aside. Layer as follows in pan: spaghetti sauce, lasagna noodles, tofu mixture. Repeat layers, ending with spaghetti sauce. Bake 35 minutes. Remove from oven; allow to set before serving.

*Be sure to check the label.

Note: You may add layers of additional ingredients if you wish, such as cooked ground beef or sausage, or diced green pepper.

    I agree if Anon, I was so excited to see this on facebook only to be disappointed once again. I am allergic to soy, wheat, dairy and poultry and this is made with tofu. Wish I could find a lasagna recipe that addressed all of my allergies.

    I clicked on this for the "Allergy-friendly entree"?...where is it??? This has soy.

    You can make eggplant lasagna without cheese or wheat and it is pretty tasty. Use plenty of sauce and spice it up with garlic, oregano, minced onion, black pepper, and a tiny bit of hot red pepper. You can dip the eggplant in egg mixed with water (or just water if you have egg allergy), and then dip the slices in potato starch. The fry them until golden and layer them in the pan with the sauce.

    I replaced the tofu with ground turkey. It could easily be done with any ground meat if you had poultry allergies. I also added in onion, carrot and zucchini.
