Ingredients

2 cups flour
4 tsp. baking powder
1/2 tsp. salt
2 T. sugar
2 cups water
3 T. oil
1/4 tsp. vanilla extract

Directions

Sift dry ingredients together; add remaining ingredients and beat together. On hot, lightly greased griddle or heavy skillet, pour batter to form circles approximately 4 inches in diameter. Cook 2 to 3 minutes or until pancakes have a bubbly surface and slightly dry edges. Flip and cook 2 to 3 minutes more, or until golden brown.

Note: This batter can be used to make waffles.

    This recipe is in a FAAN book I got about 2004. Every guest and family member I have cooked these for LOVES them. They freeze well using wax paper to separate them. My son would eat them everyday if I'd let him.

    These are really good with a mashed banana added. I also use a little less water and the pancakes come out thicker & fluffier.

    Made these this morning for my two year old son. Had leftover store bought mix that I made for my husband. My husband liked this recipe over the store bought. I added an additional 2 tsp of sugar to the recipe. My son loved them. I made mini pancakes and let him dip them in syrup. There were his first pancakes. Yeah!

    iI make these for the daycare where I work, the children love them, especially THE banana waffles. some prefer them cold, great use for over ripe bananas. to put this in the recipe.

    I have made these for guests and mini versions for my 2 year old son. They are great as is or I add pumpkin (about a 1/3 cup) and cinnamon (a teaspoon) and make them harvest pancakes. Delish! As my 2 year old would say.

    This recipe is marginal at best...added Enjoy Life mini chips (free of milk, peanuts/nuts and soy) to some of them and they were a bit better.

    Can we use rice or corn flour for this recipe instead ? My son is allergic to wheat?

    These made fantastic pancakes, both bananna pancakes and regular. I added a little extra sugar and a tiny bit less water and they were just perfect for us. This is definitely a keeper!

    I have been making this recipe for years! This works great in a waffle maker too and you can freeze the waffles for use later.
