Ingredients

1 1/2 cups graham flour
3/4 cup flour
1/2 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
1/2 cup sugar
1/4 cup milk-free margarine, softened
1 1/2 T. water, 1 1/2 T. oil, 1 tsp. baking powder, mixed together
2 T. maple syrup
1 T. water

Directions

Preheat oven to 350°. In medium bowl, combine graham flour, flour, baking soda, cinnamon, and salt. Set aside. In medium bowl, with an electric mixer on medium speed, beat sugar and margarine until light and fluffy. Beat in water, oil, and baking powder mixture; maple syrup; and water. On low speed, combine flour mixture with margarine mixture. Dust work surface with graham flour. Roll out dough to 1/8-inch thickness and divide into eight pieces. With fork, score each piece lightly into 2 1/2-inch squares. Transfer to ungreased baking sheets. Prick each cracker several times with a fork. Bake 15 minutes. Remove from pan and allow to cool on a wire rack.

Notes: For cinnamon-flavored crackers, mix 1/4 tsp. cinnamon and ½ cup sugar together and sprinkle over crackers before baking.

Graham flour, or whole wheat pastry flour, may be purchased in health food or specialty food stores.
