Gingerbread Raisin Cookies

Ingredients
1 1/2 cups white rice flour
1/2 cup cornstarch
1/4 cup plus 2 T. confectioners sugar
1/4 cup tapioca flour
1 1/2 tsp. xanthan gum
1/2 tsp. cream of tartar
1/2 tsp. baking soda
1/2 tsp. ground ginger
1/4 tsp. ground cinnamon
dash of ground cloves
dash of salt
1/2 cup milk-free margarine, chilled
1/2 cup light brown sugar, firmly packed
1 egg
1/2 cup molasses
1 cup raisins
Directions
In large bowl, combine the first 11
ingredients. Cut in margarine until the
mixture is crumbly. Set aside. In small
bowl, with an electric mixer on low speed,
beat brown sugar, egg, and molasses. Beat
egg mixture into flour mixture. Stir in
raisins. Gather dough and form a ball.
Cover and chill overnight. Preheat oven
to 350°. Roll dough into 1-inch balls and
place 1 inch apart on ungreased cookie
sheet. Bake about 12 minutes, or until
done. Cool on wire racks.
Suggestion: To make gingerbread men, do
not stir raisins into dough. Place chilled
dough between two pieces of wax paper
that has been dusted with confectioners
sugar. Roll dough out 1/2-inch thick
and cut out gingerbread men with cookie
cutters. Add raisins for eyes and buttons.
Bake as directed.
