Ingredients

1 lb lean ground beef
1/2 cup dried bread crumbs, moistened with water
1 clove garlic, pressed (optional)
1 tsp. Italian seasoning
1/4 cup grated parmesan cheese
1/4 cup milk
1/2 tsp. salt
1/8 tsp. pepper

Directions

Moisten bread crumbs in a bowl. Mix all ingredients thoroughly. Shape into balls. Brown in skillet in a little bit of oil on medium heat. Using tongs, turn often. (I covered it to make sure they would cook through well and drained it partially through cooking.) Brown evenly on the outside and thoroughly cook through. Place on paper towel to drain.

Author's Note: This recipe makes about 30 meatballs. I often freeze some meatballs for later use.

    Don't bread crumbs contain both wheat and eggs? This recipe should not show up when filtering for a wheat and egg allergy!

    there are a lot of bread crumbs that don't contain wheat and most don't contain eggs. try whole foods or fairway if you have having trouble finding them.

    Except for challah, it's pretty unusual for bread to have eggs.

    i used saltines in it and it worked very well kept it moist. i really liked it and my son loved them also thank goodness for this site i have ideas for cooking again.

    thank you Elisa that is a great idea using saltines...now i can make this recipe...i am allergic to peanuts, eggs and sunflower and all nuts and there are a lot of breads that have eggs in it there are hidden names for eggs...
