Easy Pork Ragu

Ingredients
1 (2 1/2-lb.) boneless pork loin
2 tsp. kosher salt
1 tsp. ground black pepper
2 T. olive oil
1 tsp. dried sweet basil
1 large onion, chopped
1 1/2 T. diced garlic
1 (35-oz.) can crushed tomatoes with juice
Directions
Season pork with salt and pepper. In large pan over medium-high heat, heat oil and sear pork on all sides until golden brown. Place in crock pot and add onion, garlic, and tomatoes. Cook on low for 6 to 8 hours. Shred pork into bite-size pieces.
Suggestion: Serve plain or over hot cooked pasta, rice, or potato.
Note: To cook this recipe on the stove, prepare pork as directed and then simmer
in a Dutch oven for about 3 hours.
