Double Chocolate Drop Cookies

Ingredients

1 1/4 cups flour
1/2 tsp. salt
1/2 cup Dutch-process cocoa powder
1 1/4 cups confectioners sugar
1 tsp. baking powder
1/2 cup milk-free margarine, softened
2 T. honey
2 T. vanilla soymilk

Directions

Preheat oven to 325°. Grease cookie sheets.
Set aside. In medium bowl, combine
flour, salt, cocoa powder, sugar, and
baking powder. Cut the margarine into
the flour mixture until evenly crumbly.
In a separate bowl, combine honey and
soymilk, stirring until blended. Add honey
mixture to flour mixture, and stir gently
until the dough comes together. Drop by
tablespoonfuls onto prepared cookie sheet.
Bake 15 to 20 minutes, or until set. Cool on
wire rack.
