Ingredients

1 cup light brown sugar, firmly packed
6 T. milk-free margarine, softened
1 1/2 T. water, 1 1/2 T. oil, 2 tsp. baking powder, mixed together
2 tsp. vanilla extract
1 1/4 cups flour
1/2 tsp. baking powder
1/8 tsp. salt
1 cup dried cranberries

Directions

Preheat oven to 350°. Grease 8x8-inch pan. Set aside. In large bowl,
with an electric mixer on medium speed, cream brown sugar and margarine. Beat in vanilla extract and water, oil, and baking powder
mixture. Set aside. In medium bowl, combine flour, baking powder, and
salt. Add flour mixture to sugar mixture, beating at low speed until blended. Stir in cranberries. Spread evenly into prepared pan. Bake 30 to 35 minutes or until golden in color. Cool in pan on wire rack.
