Ingredients

1 cup sugar
1/2 cup milk-free margarine, softened
3 T. water, 3 T. oil, 2 tsp. baking powder, mixed together
3 cups flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/2 cup vanilla rice beverage
1/2 cup apple juice
1 tsp. vanilla extract

Directions

Preheat oven to 350°. Line mini muffin tins with paper liners. Set aside. In large bowl, combine sugar and margarine. Add water, oil, and baking powder mixture. Mix well. Set aside. In separate large bowl, sift together flour, baking powder, salt, and cinnamon. Add to margarine mixture. Blend in remaining ingredients. Fill prepared tins 2/3 full. Bake 15 minutes or until golden brown.

Suggestion: Substitute orange juice for the apple juice or soy beverage for the vanilla rice beverage. Look for juice fortified with calcium.

    Nucoa margarine is milk and whey free. Also Earth Balance spread is milk and whey free (I like this better than Nucoa for taste). I can get Nucoa at Vons and Earth Balance at Trader Joe's.

    Earth Balance soy free natural buttery spread is milk and soy free. I found it at Wal-Mart.

    if wal-mart doesnt have it ask your local health food store, they will usually order it for you. earth balance in the red container is soy free and dairy free, my whole family uses it and its wonderful. our walmart carried it for a few months then suddenly stopped, so now we get it from our health food store.

    We use Parkay Squeeze that is in a blue bottle to substitute margerine in most of our cooking. My husband and daughter have severe allergies to milk and it is completely dairy free. I will have to try the above mentioned Earth Balance. It is good to have a back up for products because we find they they continually discontinue products that we use or they add dairy. It can be so frusterating.

    How would this receipe taste with Coconut milk (vanilla flavored) need stead of the rice? My son has milk, egg, soy and peanut/tree nut allergies. Thanks
