Ingredients

Muffins:
1 1/2 cup flour
1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 1/4 tsp. ground cinnamon, divided
1/2 tsp. salt
1/4 cup oil
1/2 cup dark molasses
1 cup applesauce
1 T. sugar

Directions

Preheat oven to 375°. Lightly grease mini-muffin tins; set aside. In large bowl, combine flour, baking soda, baking powder, 3/4 tsp. cinnamon, and salt; set aside. In small bowl, mix oil, molasses, and applesauce. Stir wet ingredients into dry ingredients; mix well. Fill prepared muffin cups 2/3 full. Combine sugar and 1/2 tsp. cinnamon and sprinkle over tops just before baking. Bake approximately 15 minutes, or until toothpick inserted in center comes out clean.

Note: These muffins may also be made using standard muffin tins. To do so, increase baking time to approximately 20 minutes.

    I made this with my 3 1/2 year old son(who has a severe nut allergy) and not only were they very easy to make, they were delicious too! I would highly recommend this recipe.

    My 4 yr old and I made these for my very picky boys and it was a hit! I didn't have any molasses so we just used honey instead...its super easy and very yummy!

    Could you substitute rice flour instead of plain white flour? Would they come out the same?

    This is not a wheat-free recipe. Use caution! Baking flour contains wheat. Be sure to substitute with another flour.

    Perhaps you could try rice flour, or oat flour. You could try it once, and if it fails, then not again, but perhaps?

    Not a good choice for wheat free. You'd need more substitutions if you can't use regular flour. Flax see, guar gum...something to hold it together.
