Ingredients

1 1/2 cups flour
1 cup sugar
1/2 cup unsweetened cocoa powder
1 tsp. baking soda
1/2 tsp. salt
1/3 cup oil
1 tsp. vanilla extract
1 tsp. white vinegar
1 cup water

Directions

Preheat oven to 350°. Lightly grease 9x5-inch loaf pan. Set aside. In large bowl, combine flour, sugar, cocoa powder, baking soda, and salt. With an electric mixer, beat in oil, vanilla extract, vinegar, and water until smooth. Pour into prepared pan and bake 40 minutes, or until toothpick inserted in center comes out clean.

Suggestion: For a festive look, sift confectioners sugar over a stencil placed on top of cooled cake.

Note: This cake freezes well.

    This is very similar to my recipe that we LOVE!
    So good EVERYONE loves it!
    I can whip this up in 5 minutes with a bowl and spoon and flock of kids but I use;

    2 cups sugar
    3 cups flour
    1/2 cup cocoa
    2 tsp baking soda
    1/2 tsp salt
    grnadma would sift together I just stir well
    then add
    2 cups water
    3/4 cup oil
    2 tsp vanilla
    2 tsp vinegar
    mix well bake at 350 30-40 min if you make it all one cake. use toothpick test :)
    makes 36 cupcakes!

    @TJ: it looks like you just double the recipe except for the cocoa. do you then use 2 loaf pans, or really fill up the one 9x5in loaf pan?
