Ingredients

1/2 cup milk-free margarine, softened
1/2 cup light brown sugar, firmly packed
1 1/2 cups (3 medium) very ripe bananas, mashed
1/4 cup water
1 teaspoon vanilla extract
3 T. water, 3 T. oil, and 2 tsp. baking powder, mixed together
2 cups flour
3 T. unsweetened cocoa powder
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/4 cup sugar

Directions

Preheat oven to 375º. Line muffin tins with paper liners. Set aside. In large bowl, combine margarine and brown sugar; beat until fluffy. Add bananas; water; vanilla extract; and water, oil, and baking powder mixture. Mix well. Add flour, cocoa powder, baking powder, baking soda, and salt; stir until dry ingredients are moistened. Fill muffin tins 3/4 full. Sprinkle sugar on top of muffins. Bake 20 to 25 minutes, or until toothpick inserted in center comes out clean. Cool slightly. Serve warm.

    i made these for my son who we just found out is allergic to dairy, eggs and peanuts. he loved them--but my other son {who has no allergies} seemed to love them even more! i was so happy to find a snack they could both eat and enjoy together! thanks!

    if the water, oil and baking powder mixture replaces eggs, then try 1 tblsp ground flax see and 3 tblsp warm water and let sit for about 5 minutes that replaces one egg. flax is also very healthy for you too.

    Well I am allergic to wheat, egg, and dairy I found this to be not a bad recipe. I substitute the flour with buckwheat flour and for the butter I used coconut oil because I don't believe in the margarine. I also substituted the brown sugar, with sucanat, the only difference is I used less baking time, instead of 20 Mins I found 15 min to be just right.

    Like the other comment, we also replace egg with 1 Tbl flax and 3 Tbl water in recipes, but too much flax does a number on little tummies. Choc/banana combo is our fave.

    Yummy! These are wonderful! I did not have enough bananas so I used applesauce to finish it and they are wonderfully moist and delicious.
