Ingredients

3 cups flour
1 1/2 tsp. baking powder
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. salt
2/3 cup vegetable oil
3/4 cup light brown sugar, firmly packed
2 tsp. orange zest
1 1/4 cups white grape juice
3 tsp. vanilla extract
1 1/2 cups peeled, grated carrots

Directions

Preheat oven to 350. Grease fluted tube pan. In small bowl, combine flour, baking powder, cinnamon, nutmeg, and salt. Set aside. In large bowl, mix oil, brown sugar, and orange zest until smooth. Stir in white grape juice and vanilla extract. With an electric mixer on medium speed, beat in flour mixture until smooth. Batter will be thick. Stir in carrots. Spoon batter evenly into prepared pan. Bake 30 minutes or until a toothpick inserted into the center comes out clean. Cool in pan 10 minutes. Loosen edges with a knife. Invert onto serving plate and allow to cool completely.

Suggestion: Stir in 1 cup golden raisins along with the carrots.

    A Bundt pan is an example of a "fluted tube pan".

    Kelly, you may wish to try another sweetener in place of the brown sugar. Honey may work (perhaps with a tablespoon of applesauce to help give the product moisture).
