Ingredients

Cookies

1 cup sugar
3/4 cup shortening
1 1/2 T. water, 1 1/2 T. oil, 1 tsp.baking powder, mixed together
1 cup grated carrots
2 cups flour
2 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla extract

Directions

Preheat oven to 350°. In large
bowl, with an electric mixer on
medium speed, cream sugar and
shortening. Beat in water, oil, and
baking powder mixture. Stir in
carrots. Set aside. In small bowl,
combine flour, baking powder, and
salt. Blend into sugar mixture.
Stir in vanilla extract. Drop by
tablespoonful onto cookie sheets. Bake 15
to 18 minutes, or until bottoms are light
golden brown. Drizzle with Orange Glaze,
if desired.

Orange Glaze

1/2 cup confectioners sugar
1 tsp. orange juice
1/2 tsp. water

In small bowl, stir together all ingredients
until smooth.

    I have read the labels on all of the shortening at my local grocery store and they all contain sobean oil. Is there any shortening that doesnt?

    yes, spectrum is palm oil based. can get it at whole foods ;-)

    I used butter and coconut flour instead and they turned out okay. if you use coconut flour, use less or no sugar because the flour is already sweet.
