Caribbean Fritters

Ingredients
oil for frying
1 cup cornmeal
1/2 cup flour
1 tsp. baking powder
1 cup water
salt to taste
1/2 cup broccoli, chopped
Directions
In a deep pot, heat 1 to 1 1/2 inches of cooking oil. In a medium bowl, combine other ingredients except broccoli. Stir well. Add broccoli and stir until well covered in batter. Scoop mixture by spoonfuls into hot oil. Fry until golden brown, turning once.
Notes: For wheat-free fritters, substitute flour with cornmeal; adjust water if necessary. Chopped spinach leaves may be substituted for broccoli.
