M E P S N
Ingredients
1 cup banana, mashed (about 2 bananas)
3 T. water, divided
1 tsp. vanilla extract
2 cups flour, divided
6 T. ice water
1 tsp. cider vinegar
2 T. confectioners sugar
1/2 tsp. salt
1/2 cup milk-free margarine
sugar for sprinkling
Directions
Preheat oven to 400 °. Lightly grease cookie sheet. Set aside. Prepare filling by combining banana, 2 T. water, and vanilla extract in small bowl. Set aside. In large bowl, combine 1/2 cup flour, ice water, and vinegar. Whisk until well blended. Set aside. In another large bowl, combine remaining flour, confectioners sugar, and salt. Cut in margarine until mixture resembles coarse meal. Add vinegar mixture, blending with a fork until moist. Knead dough by hand, if necessary. Turn out dough onto plastic wrap. Pat into 4-inch circle. Cover with another sheet of plastic wrap and roll dough into 18x12-inch rectangle. Freeze 10 minutes. On lightly floured surface, cut dough into circles with 3-inch round cutter. Place onto prepared cookie sheet. Spoon banana filling onto each circle. Fold dough over filling and seal edges with fork. Brush tops of dough with remaining 1 T. water and sprinkle with sugar. Bake 20 minutes.

These recipes are totally bogus! I clicked "soy-free" as a filter and expected to be shown recipes that are actually soy free. I have searched the internet high and low trying to find good soy-free baking recipes; i thought this website of all places would have the answer, but none of these recipes are soy-free.
