Ingredients

2 cups flour
1 cup plus 2 T. sugar
1 1/2 tsp. baking powder
3/4 tsp. baking soda
1/2 cup milk-free margarine, melted
1 T. vanilla extract
3/4 cup water
4 bananas, mashed
3 T. water, 3 T. oil, 2 tsp. baking powder, mixed together

Directions

Preheat oven to 350°. Grease 9x13-inch baking pan. Set aside. In large bowl, combine flour, sugar, baking powder, and baking soda. Set aside. In a separate
bowl, mix margarine, vanilla extract, water, bananas, and water, oil, and baking powder mixture. Combine with dry ingredients. Spread batter into prepared pan. Bake 35 minutes, or until toothpick inserted in center comes out clean.

Note: Top with Cinnamon Icing if desired.

    This cake is NOT SOY FREE!!! beacause margarine.
    BUT it can be SOY FREE if you use "Spectrum" Naturals Organic Shortening. Made with organic palm oil, Spectrum Organic Shortening is non-hydrogenated making it an excellent alternative to traditional shortening.

    I just made this for my son who has milk allergies yesterday and I now have a second one in the oven already! Very tasty, I topped it with brown sugar for the last 5 minutes and was very good! Definitely passing on this recipe! Thank you!

    Can you substitute rice (white or brown) flour for the regular flour, and use shortening instead of butter???

    I accidently left out the milk-free margarine when I made it & it still turned out great....so it can by soy free!!!

    There is no butter or margarine in the market my son is not allergic to but we use olive oil for all baking/cooking needs and it has been great. We realize we don't need butter or margarine.

    I made mini muffins. The texture is good but they are really really sweet (with 1c sugar used). I used 1c white and 1c whole wheat flour and added a few tablespoons of ground flax. I also used Becel 64%less calorie and 67% less fat margarine (dark pink container) because it is dairy/lactose and soy free.
