Ingredients

6 T. milk-free margarine, softened
1 cup light brown sugar, firmly packed
1 1/2 T. water, 1 1/2 T. oil, 1 tsp. baking powder, mixed together
1/2 tsp. vanilla extract
1 large banana, mashed
1 3/4 cups barley flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 cup raisins

Directions

Preheat oven to 350º. Grease 9-inch pan. In large bowl, beat margarine and brown sugar until creamy. Beat in water, oil, and baking powder mixture; vanilla extract; and banana. Set aside. In another bowl, stir together barley flour, baking powder, and salt; combine with margarine mixture. Blend thoroughly. Stir in raisins. Spread batter evenly in prepared baking pan. Bake 40 minutes or until toothpick inserted in center comes out clean. Let cool in pan before cutting. Store in refrigerator.

    I substitute flours lots I use buckwheat flour for alot of things because I can't have wheat and gluten and rice right now so I think you should be able to use regular flour.

    NO! Do not use regular flour as it contains gluten and is not allowed if allergic to wheat.

    Can I use spelt flour instead of barley flour? My son is allergic to wheat but not glutten. I've recently discovered spelt flour is not a problem for him.

    Barley DOES contain a small amount of gluten. However doesn't have wheat so may be used for someone with wheat allergy-however not someone who is gluten intolerant.

    why is this recipe asking for baking powder twice?

    baking powder is listed twice because in combination with oil and water, it is a substitute for eggs in the recipe. ;-)
