Bakeless Pumpkin Pie

Ingredients

1 (15-oz.) can pumpkin
2 packages firm tofu
1/2 cup water
1 cup corn or rice syrup
1 1/2 T. ground cinnamon
1 tsp. ground ginger
1/2 tsp. ground nutmeg
1/2 tsp. allspice
1 packet unflavored gelatin
graham cracker crust

Directions

Pour the water in a small saucepan. Shake the gelatin over the water and let sit for 1 minute. Heat over low heat, stirring constantly until gelatin dissovles (in about 2 more minutes). Add pumpkin, tofu, corn syrup, gelatin mixture, cinnamon, ginger, nutmeg and allspice into food processor. Blend on highest setting until completely smooth. Occasionally turning off to stir edges. Pour into graham cracker crust and refrigerate overnight.
