Ingredients

1 cup dried apricots, chopped
1 cup boiling water
2 cups flour
3/4 cup sugar
1 tsp. baking soda
1/2 tsp. salt
1 cup apple juice
1/4 cup milk-free margarine, melted
1/4 cup oil
1 1/2 T. water, 1 1/2 T. oil, 1 tsp. baking powder, mixed together
1/2 cup dates

Directions

Preheat oven to 400°. Line muffin tin with paper liners. Set aside. In small bowl,
combine apricots and boiling water. Let stand 5 minutes.

In medium bowl, combine flour, sugar, baking soda, and salt. Stir in apple juice;
margarine; oil; and water, oil, and baking powder mixture until just moistened. Drain apricots and stir into batter. Stir in dates.

Spoon mixture into prepared muffin tin, 2/3 full. Bake 15 minutes, or until toothpick inserted in center comes out clean. Cool in pan.
