Ingredients

1/2 cup milk-free margarine, softened
1/2 cup shortening
1 cup sugar
3 T. water, 3 T. oil, 2 tsp. baking powder, mixed together
1 T. grated lemon rind
1 1/2 tsp. vanilla extract
3 1/2 cups flour
1/2 tsp. baking powder
1/2 tsp. salt
1 cup confectioners sugar, sifted

Directions

In large bowl, with an electric mixer on medium speed, beat margarine and shortening together until soft and creamy. Add sugar; beat well. Add water, oil, and baking powder mixture; lemon rind; and vanilla extract. Mix well. Add flour, baking powder, and salt; mix well. Cover and chill 1 hour.

Preheat oven to 375°. Divide dough in half; store one portion in refrigerator. On a lightly floured surface, roll dough to 1/8-inch thickness. Cut with a 2 1/2-inch star-shaped cookie cutter and place on ungreased cookie sheets. Bake 7 to 8 minutes or until lightly browned; cool on cookie sheets. Move to wire racks. Sprinkle generously with confectioners sugar.
